Bitter spicy tarhana is cooked like battered (wheat) rice and mixed with yoghurt and spices. And then tarhana is obtained by over-drying it. Since the yogurt used in the making of tarhana is not cooked, the viability of probiotic bacteria is in question. At the same time, wrought wheat used in production turns it into a functional food material with the incoming probiotics. Consumption: It is consumed as snack chips. It is not suitable for Maraş style tarhana soup as it is baked.
